Almond Pistachio Whole Grain Biscotti

If you can’t find pistachio’s at a good price, just replace them with additional almonds.

 350 F   1st bake: 25min    

 275 F   2nd bake: 20 min

1/4       cup      oil or softened butter

3/4       cup      sugar

1/4       cup      almond paste

3                      eggs

1          tsp       vanilla extract

3          cups     whole grain flour or whole wheat flour

1          tsp       baking powder

1/8       tsp       salt

3/4       cup      pistachios

3/4       cup      almonds, sliced

3/4       cup      apricots, dried, diced (or peaches, nectarines)

Beat together oil, sugar and almond paste until fluffy.

Beat in eggs and vanilla.

Add flour, baking powder and salt.

Blend until smooth.

Fold in nuts and fruit.

Divide dough in half and shape each into a log about 3 inches wide and 3/4 inches high.

Bake for 25 minutes in a preheated 350F oven, remove and slice.

Put slices back into the oven at 275F for minutes.
