Licorice Biscotti

I can’t vouch for these recipes copied off the internet or cookbooks (and altered, i.e. whole grain flour, oil not butter, no toasting of nuts, etc).

Check out my Best whole grain biscotti and Advanced whole grain biscotti recipes as a basis for using licorice flavorings (fennel seed work too).

Licorice Biscotti   350 F           1st bake: 20 min  2nd bake: 12 min

3                      eggs

2          tsp       anise extract

3/4       cup      sugar

1 1/2    cup      whole grain flour or whole wheat flour

1/4       cup      corn flour*

1/2       tsp       baking powder

 

Mix eggs, anise, sugar and salt in a mixing bowl. Whip until very light, about 6 minutes (with a high speed hand mixer).

In another bowl, mix together baking powder, whole grain, and whole corn flour.

 

Mix the egg and flour mixtures.

Using a pastry bag (3/4 inch opening), pipe two logs of batter onto a greased pan.

Logs should be 1 1/2 inches wide.

Bake for 20 minutes, until golden.

Remove from oven and slice into ½ inches with a serrated knife

Place the slices into the oven, and bake for another 12 minutes.

Makes 48 biscotti

*Preferably whole grain corn flour from Bob’s Mill or from your own home mill
